Despite being a chocoholic, my favorite Christmas cookie is Mexican Wedding Cakes -- so easy to make and even easier to pop right into your mouth if you roll them small. And, with only five ingredients, these can be thrown together quickly!

1 c. butter (soft)
1 tsp. vanilla
2 1/4 c. flour (sifted)
1/2 c. powdered sugar (sifted)
3/4 c. nuts (finely chopped)

Thoroughly mix butter, sugar and vanilla. Gradually stir in flour. Add nuts. Chill dough at least one hour. Roll into balls the size of small walnuts. Place on ungreased cookie sheet. Bake at 400 degrees F. until set but not brown, about 10 minutes. While still hot, roll in powdered sugar. Cool. Roll in powdered sugar again. If stored very long, roll in powdered sugar again before serving.

Here's an extremely easy recipe that is excellent (AND is South Beach Phase II-approved - that means you can eat it guilt-free, in moderation, of course.):

Pistachio bark

12 squares semi-sweet chocolate
1 cup shelled pistachios

Microwave the chocolate in a microwavable bowl on high
for 2 minutes, stirring after 1 minute. Stir until
completely melted.

Toast the pistachios in a pan until slightly toasted, about 2 minutes. Stir the nuts into the chocolate.

Spoon the chocolate and nut mixture onto a waxed paper-lined baking sheet.

Refrigerate for 1 hour until firm. Break into bite-size piecess about an inch in size.
